Undoubtedly the highlight and core of the events are the practical cookery demonstrations taking place every day over the three days of the festival in the fully equipped demonstration marquee. Hotels and restaurants in Newquay will be promoting local fresh fish and shellfish.

Local chefs from hotels, restaurants and bistros entertain the visitors with their flamboyant demonstrations using local fresh fish, shellfish and locally available produce and of course the opportunity to taste the results is greatly appreciated. Head Chef of Rick Stein’s new Fistral Restaurant, Fergus Coyle, will be among a host of top chefs taking time out from their busy restaurants to show visitors to the Newquay Fish Festival how to prepare locally landed fish and shellfish. Fergus told the Voice: “"I'm delighted to be invited to Newquay Fish Festival this September. There's some fantastic local produce in the area as well as talented chefs and suppliers and I'm looking forward to being a part of it all. “I haven't decided on the dish I will demo yet, but it's likely to be one of Rick's favourite recipes that we'll be featuring on our menu at Fistral."
