Marinating Fish Before Stir Frying Boosts the Flavour

Fish can be stir-fried by pre-heating a wok, adding a swirl of oil, garlic, seasoning and vegetables of your choice.   After heating, put these ingredients into another dish, put the wok back on the heat, add some oil and fry the fish (adding the previously prepared seasoned vegetable once the fish is cooked to your taste).   Marinating the fish for up to 20 minutes before stir-frying will boost the flavour.
