Grilled or Barbecued Fish

Ideal for thick fillets

Fish steaks and thicker fillets are ideal for grilling.   Thinner fillets need only be grilled on one side.   Preheat the grill to a fairly high heat to ensure the fish juices are sealed in quickly.   Brush the grill rack and fish with oil to prevent sticking.   All fish will benefit from being marinated in oil and lemon juice for 1 hour before grilling.
